Easy Sourdough Bread

Making sourdough bread is so easy! Here is how I do it.



Ingredients:

735 g water, divided

200 g sourdough starter

800 g all-purpose flour

200 g whole wheat flour

20 g salt


Directions:

Mix 720 g water and starter in bowl until frothy.

Add flours and stir to combine. Dough will be thick and shaggy.

Let sit covered (autolyze) for 30 minutes to 2 hours.

Add salt with remaining 15 g water and knead to combine.

Let sit covered for 6-12 hours, stretching and folding when you can near the beginning of that time.

When dough is airy and well risen, turn out and divide into two dough balls.

Prepare two bannetons or bowls by lining and dusting with flour to prevent sticking. I use rice flour.

Shape dough and transfer to bannetons.

Leave in refrigerator overnight.

Pre-heat oven to 500 degrees Fahrenheit with Dutch oven inside.

Score bread and place in hot Dutch oven, cover and immediately lower temperature to 470 degrees.

Bake 20 minutes, covered.

After 20 minutes, uncover and bake for a further 15 minutes.

Let cool at least one hour before slicing.
